1 1/4 Cup all-purpose flour

1/4 cup sugar

1/2 cup cocoa powder

1/2 tsp salt

1/2 cup soy milk

1/2 cup water

1 tbsp. white vinegar/ apple cider vinegar*

2 tsp baking powder

1 tsp coffee**

1/4 cup olive oil

1 cup cocoa nibs (if you do not like dark chocolate, only use half the suggested cocoa nibs)

*Used instead of an egg, seems weird but you do not taste it all. It helps the cupcakes/ cake to rise.

**You can add cranberries, blueberries, crushed macadamias, or coffee powder


Preheat oven to 180C

Mix together all dry ingredients (leave out cocoa nibs), then add soya milk, oil, vinegar and stir. Fold in cocoa nibs, and divide batter evenly among the 12 wells of the muffin pan, or add everything into a bowl to make a cake.

Bake for 10 -15 minutes, depending on your own. Check on 7 minutes, use a toothpick to test.
